Pumpkin Chocolate Chip Protein Bites

Made these yummy pumpkin pie protein balls with the kids today! Super simple, they loved helping, and always nice to get extra protein in them when they want a little snack!

(excuse Deacon’s super pitiful face, he has had a fever for a few days now 🙁 )

Here’s what you need:

-1 cup oat flour (I just ground up whole oats in my blender for about 30 seconds until it was a fine powder)

-1 serving vanilla protein powder (my personal favorite is Powercrunch Protowhey, but this is a personal preference! Today I used the simple truth organic vanilla whey)

-1/4 tsp salt

– rounded 1/4 tsp pumpkin pie spice

-1/4 tsp cinnamon

Mix dry ingredients together very well.

Add in:

-2 heaping TB nut butter (I used peanut butter but next time I am going to try the Justins Maple Almond Butter because I feel like it would be an ah-mazing addition)

-1 TB honey

-1/4 cup pumpkin puree – you will want to add this slowly so it doesn’t get too gooey, but if it does get too gooey you can always add more oat flour!)

-3 TB chopped semi-sweet chocolate chips

 

Mix it all together until it forms a dough, then roll into balls and pop in the fridge.

Note: these are not super sweet, so you could always add stevia if you wanted to sweeten them up a bit more! I will definitely be making them again trying the maple almond butter!!
